Low FODMAP Chicken Broth

Health benefits:

This warming broth is great for the winter months and makes a low FODMAP diet far from boring.

By using garlic infused oil and only the green parts of the veggies, this broth is still packed with the flavours you love.

It’s also high in protein to keep you fuller for longer.

Ingredients

  • 1tbsp Garlic infused olive oil
  • 1.5cm fresh ginger
  • Chicken stock (without FODMAPS like onion powder)
  • 1tsp soy sauce
  • 1tsp rice wine
  • Handful of spring onions (green tops only)
  • Pak choi (green tops only)
  • 75g rice noodles
  • 100g cooked chicken
  • 1 boiled egg

Method

  1. Cook noodles as per packed instructions and boil egg to desired consistency
  2. Fry ginger in garlic infused oil for 1 min
  3. Add chicken stock, soy sauce and rice wine
  4. Simmer for 10 mins
  5. Add bok choy to broth for 90 seconds
  6. Serve in a bowl with spring onion tops, cooked noodles, egg and chicken
  7. Enjoy!
