Vegetarian chilli loaded sweet potatoes

Health benefits:

A medium-sized sweet potato counts as one of your 5-a-day. They’re are also high in beta-carotene needed for vitamin A, which supports your vision. Sweet potatoes are also a great source of fibre (so make sure to eat the skin).

Quorn mince is used in this recipe to replace the meat. It is made from mycoprotein (a type of fungi) which is a lot like mushrooms, and is a source of fibre and plant-based protein.

The black beans help bulk this meal out with more plant-based protein and fibre. As well as providing another one of your 5-a day! Black beans are a great plant-based source of the essential amino acid lysine, which is important for muscle growth and bone health.


  • 4 sweet potatoes
  • 1 1/2 tbsp of extra virgin olive oil
  • 3 cloves of garlic
  • 1/2 tbsp of ground cumin
  • 2 tsp of dried coriander
  • 1 tbsp of tomato puree
  • 1 square of 85% dark chocolate
  • 2x 400g can of Italian chopped tomatoes
  • 1 large red bell pepper
  • 2 red onions
  • 1 can of kidney beans in water
  • 320g of Quorn mince

Optional extras

  • Jalapenos
  • Sour cream
  • Cheddar cheese
  • Feta cheese
  • Fresh coriander


  1. Pierce sweet potato all over with a fork, brush outside with olive oil and place in the oven at 180°C for 30 minutes
  2. Fry onion and red peppers in a pan with olive oil until onions are softened and translucent
  3. Add the garlic, cumin, chilli powder, oregano and dried coriander to the pan
  4. Add the tomato puree to the pan and mix altogether
  5. Add the Quorn mince and canned tomatoes and leave to simmer until most of the liquid has evaporated
  6. Add the kidney beans and a square of dark chocolate, stir and leave to simmer until the desired consistency is reached
  7. Take the sweet potatoes out of the oven once cooked, cut in half and top with the chilli
  8. Optional extras: add any additional toppings you would like such as cheese and fresh herbs
