Try this homemade pesto pasta, packed with fibre and antioxidants. Made with cavolo nero and walnuts, two ingredients rich in gut loving polyphenols, it’s as nutritious as it is delicious.

Ingredients

  • Handful of basil
  • Handful of Cavolo Nero
  • 50g parmesan
  • 150g Whole wheat pasta
  • Handful of Walnuts
  • 4 tbsp EVOO
  • Salt & Pepper
  • Lemon juice

 

 

Method

  1. Boil the pasta until al dente, see packet for details or keep tasting until happy! Once cooled, the pasta forms resistant starch, which is easier on your blood sugar.
  2. In a blender or food processor, blitz together the cavolo nero, walnuts, basil, EVOO, parmesan, salt and pepper.
  3. Once blended taste and season accordingly.
  4. Mix together the pasta and pesto, squeeze a lemon over the pasta and garnish with basil.
