Homemade baked beans on sourdough

Health benefits:

Eating a variety of different plant foods are important for maintaining the diversity of your gut microbiome and achieving optimum gut health. Choosing mixed beans gives your gut that diversity in one meal. Beans are a great source of plant-based protein, dietary fibre and B vitamins such as folate.

Sourdough has also been shown to be more easily digested compared to other bread varieties, making it a great option for these hearty homemade beans.

 

Ingredients

  • 1 can of mixed beans
  • 1 tbsp of extra virgin olive oil
  • 1x 400g can of Italian chopped tomatoes
  • 1 tbsp of tomato puree
  • 1 tsp of oregano
  • 1 tsp of smoked paprika
  • Seeded sourdough bread
  • 1 garlic clove

Optional extras:

  • Cheese
  • Nutritional yeast
  • Chilli flakes
  • Avocado
  • Eggs
  • Lime juice

Method

  1. Fry garlic in olive oil
  2. Add the tomato puree and smoked paprika
  3. Add the chopped tomatoes and oregano
  4. Leave to simmer until most of the liquid has evaporated
  5. Add the mixed beans, including the water from the can (this is key to thickening the sauce)
  6. Allow to simmer until most of the liquid has evaporated, stirring to ensure it does not burn on the bottom
  7. Serve with sourdough toast and any additional toppings you like
  8. Add optional extras such as avocado, cheese, nutritional yeast, mixed seeds or chilli flakes
