This chicken burrito bowl is bursting with flavour, from the warming smoky paprika to the heat from the jalapenos, you will leave feeling satisfied.

The chicken breasts provide a great source of protein, aiding muscle mass as well as keeping you fuller for longer. The kidney beans (or any bean you want) provides a punch of gut-healthy fibre for those microbes in our guts. Not only that, but kidney beans are a source of key nutrients such as folate, iron, vitamin B1 (Thiamine), and 3 tbsp count towards one of your 5-a-day. This recipe also provides approximately 12 different plant sources, which is almost half the recommended 30 different place sources per week. Having a variety of different plants in your diet is essential to maintaining and gaining a large microbiome diversity.


Ingredients

  • 2 Chicken breasts
  • 150g brown rice
  • 100g tinned sweetcorn, in water, drained
  • 1 pack of cherry tomatoes
  • 1 medium red onion
  • 1 medium red pepper
  • 1 tbsp chopped garlic (we used Very Laze chopped garlic
  • 1 tbsp jalapenos, chopped
  • 30g fresh coriander
  • 1 Lime (juice)
  • 2 tsp mixed herbs
  • 2 tsp ground cumin
  • 2 tsp dried coriander
  • 2 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • 1 pinch salt
  • Optional extras: any cheese of choice, sour cream, advocado

Method

  1. Pre-heat oven to 180 degrees
  2. Slice the red peppers thinly and place in baking dish
  3. Slice the red onion thinly and place in baking dish
  4. Add 1/2 tbsp chopped garlic to the baking dish
  5. Slice the chicken breasts and place in baking dish
  6. Sprinkle the smoke paprika, ground cumin, mixed herbs and salt over the chicken and vegetables in the baking dish
  7. Drizzle with extra virgin olive oil
  8. Stir the mixture to evenly coat the chicken and vegetables
  9. Place in oven for approximately 20 - 30 minutes
  10. Bring some water to boil and cook the rice as per packet instructions
  11. Chop the cherry tomatoes, coriander and jalapenos
  12. Drain and rinse the sweetcorn and kidney beans
  13. Squeeze lime juice over the salsa mixture along with a pinch of salt
  14. Once the rice and chicken mixture are cooked, serve and enjoy
