Sriracha & Sesame Salmon with Rice Noodles

Health benefits:

As well as being incredibly easy to make, this Asian-inspired dish is packed full of health benefits. The salmon packs a heart-healthy punch by providing essential omega-3 fatty acids, which our bodies cannot produce themselves.

Some studies suggest that consuming oily fish, such as salmon, may help to reduce inflammatory markers within our bodies. The sesame oil and sesame seeds may also act as an anti-inflammatory, as well as providing antioxidants and potentially reducing LDL cholesterol which is thought to be the ‘bad’ cholesterol in our bodies.

Finally, broccoli is a nutrition powerhouse. This brassica contains a specific compound called sulforaphane which has been shown to neutralise toxic substances, reduce inflammation and prevent mutations within DNA occurring. Research into these potentially cancer-preventing properties has grown. However, further research is still needed to strengthen these health claims.


Ingredients

  • 2 Salmon fillets
  • 2 tbsp sesame seeds
  • 2 tsp siracha
  • 1.5 tbsp sesame oil
  • 2 rice noodle nests
  • 1 small broccoli
  • 1 large carrot
  • 1/2 jar pickled red cabbage
  • 30g pack fresh coriander
  • 1 tbsp chopped garlic
  • 6cm piece of fresh ginger, peeled, grated

Method

  1. Pre-heat oven to 180 degrees
  2. Place the salmon fillets on a baking tray and coat with the sesame oil, siracha and sesame seeds
  3. Cook the salmon in the oven for 15-20 minutes
  4. Soak the rice noodles in a bowel with boiling water for approximately 3 minutes, covered
  5. Heat up a frying pan or wok
  6. Stir-fry the broccoli with some more sesame oil, grated ginger, and garlic until cooked (add a bit of water and cover with a lid for softer broccoli if you do not like it crunchy)
  7. Drain the rice noodles
  8. Finely chop the carrot into small batons
  9. Remove the salmon from the oven
  10. Drain the pickled cabbage
  11. Assemble all the ingredients together
  12. Optional: Drizzle with more siracha/ add chilli flakes/ drizzle with soy sauce
