Minty peas on toast

Health benefits:

Peas are a great source of plant-based protein and 80g count towards one of your 5-a-day. Don’t be put off by them being frozen. Frozen fruits and vegetables are just as nutritious and may even provide more nutrients than their fresh versions. This is because they’re frozen at their best and their nutritional content doesn’t diminish. Whereas fresh fruits and veggies start to degrade and lose their nutrients overtime.

Ingredients

  • 4 slices of seeded sourdough bread
  • 160g of frozen peas
  • 1 tsp of dried mint
  • 1 lemon
  • 1 tsp of chilli flakes
  • Fresh coriander
  • 1/2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Optional Extras

  • Avocado
  • Eggs

Method

  1. Boil the peas in a pan until cooked (approx 2 minutes)
  2. Drain and add to a bowl or food processor
  3. Coarsely crush the peas with lemon zest, lemon juice and extra virgin olive oil
  4. Mix in the dried mint, chilli flakes, salt and pepper
  5. Toast the bread and top with the crushed pea mixture
  6. Optional extras: add the avocado to the mix and serve a poached egg on top
