Ingredients

  • 650g Tomatos
  • 1 Block of feta
  • Half Red Onion
  • 250g Butterbeans
  • Handful of Parsley
  • Splash of EVOO

 

 

Method

  1. Cut your tomatoes into quarters and toss them into a large mixing bowl. Tomatoes are full of antioxidants like lycopene.
  2. Grab your parsley and add it in. Fresh herbs like parsley aren’t just for flavour - they also support digestion and provide gentle detox benefits.
  3. Slice your red onion into thin lines and add that to the bowl. Raw red onion is rich in prebiotics, food for your gut microbes.
  4. Measure out your beans, drain then add them to the bowl. Beans are fibre powerhouses and a great source of prebiotic GOS.
  5. Season with salt, pepper, and EVOO to your liking. EVOO supports a healthy gut lining and has anti-inflammatory perks.
  6. Crumble your feta cheese on top!
  7. Give it a gentle mix and let it sit for 5–10 minutes so the flavours mingle. Serve fresh or chilled.
