A Meditteranean take on potato salad! It’s packed with resistant starch from the cooked and cooled potatoes. Together with juicy Kalamata olives and capers for lots of gut loving polyphenols – happy taste buds and happy gut bugs.

 

 

  

Ingredients

  • 360g Salad Potatoes
  • Handful of kalamata olives
  • Handful of Dill
  • 2 tbsp Capers
  • Handful of spring onions
  • Splash of EVOO
  • 4 Eggs (Optional)
  • 1 tsp Dijon mustard (Optional)
  • 1/2 Lemon (Optional)

 

 

Method

  1. Cube and boil the potatoes until fork-tender. Once cooled, these potatoes develop resistant starch, which feeds your good gut bugs. So yes, chilling your spuds is an act of digestive self-care.
  2. In a big bowl, throw in the cubed potatoes, olives, capers, dill and spring onions. Mix gently. Spring onions are full of prebiotics! They're like snacks for your gut microbes.
  3. Drizzle with EVOO, add salt and pepper to taste. EVOO isn’t just delicious, it helps reduce inflammation and keeps your gut lining happy.
  4. Optional - make this a main meal by adding protein like boiled eggs or even some mackerel for omega 3s! Boil eggs for 8 minutes to get the perfect consistency.
  5. Want to get fancy? Mix lemon juice, Dijon mustard and EVOO in a small bowl. Stir it like you mean it.
  6. Pour dressing over the potato mix, give it one final toss, and serve. Boom: a salad your gut will thank you for, and your taste buds won’t complain either.
