Mediterranean Flatbread Pizza

Health benefits:

This delicious Mediterranean flatbread pizza is perfect for all the family.

It’s mostly based on ingredients that you can buy in tins or glass jars from the store.

That means less waste as they have a long shelf life and keep well in the fridge after opening. Tins and jars are easy to recycle too!



  • Flatbread
  • Tuna (Half a tin)
  • Anchovies (Half a tin)
  • Capers (1 teaspoon out of jar)
  • Artichokes (2-3 out of a jar)
  • Olives (Handful out of a jar)
  • Sundried tomatoes or cherry tomatoes
  • Red onion (thinly scliced)
  • Mozzarella
  • Extra virgin olive oil (2 tablespoons)
  • Thyme
  • Chili flakes


  1. Drizzle half of the extra virgin olive oil over the flatbread
  2. Break up around half the mozzarella ball onto the bread
  3. Add on the red onion, tomatoes, tuna, anchovies, capers, olives and artichokes
  4. Sprinkle with chilli flakes (if you like some heat) and thyme
  5. Bake at 180C for around 10-minutes
  6. Drizzle over the rest of the extra virgin olive oil
