Creamy salmon and asparagus pasta

Health benefits:

Salmon is a great source of heart healthy omega-3s and protein. It is also recommended that we have two portions of fish per week, with one of them being oily fish. So, the salmon in this dish is perfect for ticking that weekly oily fish off.

While it can be expensive, supermarkets and fishmongers sometimes offer salmon trimmings or off-cuts. These are just as good for you and are generally cheaper.

This meal also provides vitamins C, A and K, and nutrients such as potassium from the asparagus. Worried about leftovers? Cooling the pasta overnight and reheating it actually produces ‘resistant starch’ which acts as dietary fibre. This is so you don’t need to be having the wholewheat alternatives, to get this fibre fix.

Top tip: Salting the pasta water makes the pasta easier to digest, as the salt breaks down the fructans in the pasta.

Ingredients

  • 2 salmon fillets
  • 100g of asparagus
  • 200g of farfalle pasta (or pasta of choice)
  • 160g of frozen peas (defrosted)
  • 1 lemon (zest and juice)
  • 3 garlic cloves
  • 1 tbsp of extra virgin olive oil
  • 2 tsp of black pepper
  • 60g of parmesan
  • 20g of fresh dill

Optional extras:

  • Cream cheese (for extra creaminess)
  • 125ml of white wine

Method

  1. Bake the salmon in the oven at 180°C for 20 minutes
  2. Boil the pasta in salted water for 9-11 minutes
  3. Add the chopped asparagus and peas to the same pot as the pasta and boil for 3 minutes
  4. Once all cooked, drain and set aside
  5. Fry the garlic cloves in a pan with extra virgin olive oil
  6. Add the pasta, asparagus, peas and salmon to the pan and mix altogether
  7. Stir some black pepper, parmesan and lemon zest through the pasta (optional: cream cheese)
  8. Top with fresh dill, more parmesan and lemon juice to taste
